The majority of our recipes we love. I mean why wouldn’t we? Every recipe that goes into our programs or eBooks must be the very best. But some just make you want to dance a little. This is one of them.
What’s more holiday then egg nog?
Let’s have some.
In a large sauce pan, warm the milks and maple syrup with cinnamon, cloves and allspice over medium heat, about 5 minutes, being sure not to overheat. While the milk mixture is heating, in a large bowl whisk the egg yolks vigorously until frothy, about 1 minute.
While whisking eggs constantly, slowly pour half of heated milk mixture into the egg yolks. Pour the tempered egg yolks back into the milks and whisk to combine. Continue to heat for another 5 minutes, but don’t boil (it will curdle). Remove from heat and whisk in alcohol if using.
Remove from heat and strain out whole spices. Whisk in the nutmeg. Chill in the fridge for at least 1 hour and top with a dash of freshly grated nutmeg.
