Our photography contributor and lovely mama, Samantha is back to share a recent WIN for Reset: 14 that spelled kid-friendly with a capital K.
I participated in the Reset:14 program this last week and I have been trying all of these delicious recipe ideas including their smoothie recipes. I wanted to try a smoothie recipe that wasn’t green in color so that my 3-year-old son would give it a chance. He’s a toughie sometimes. We made the Free Radical Fighting Smoothie that is a nice pink friendly color for him to try…he did take a couple of sips with a little coaxing. He is always a little hesitant with trying the juices I make because there are usually greens involved (and he can pick those out from a mile a way).
I decided it would be more efficient to make popsicles for him and my 1-year-old daughter with this smoothie mix. Sure enough the next day we had the popsicles for an afternoon snack and they just loved them. I have found that there is a way to get my young kids to eat healthier foods by just getting a little creative in the kitchen. The kids didn’t realize they were eating greens and they loved it. And of course mama was happy to see them enjoying a healthy Popsicle!
FREE RADICAL FIGHTING SMOOTHIE
1 large or 2 small servings
1 cup water, + more as needed to thin
2 cups spinach, fresh
4-5 mint leaves
2 cups ripe cantaloupe, rind removed and in chunks
½ cup frozen raspberries
1 apple, cored and cut into chunks
Juice of 1 lime
*Protein powder (optional)
Blend water, spinach, mint leaves, cantaloupe, blueberries, apple and lime juice in a high speed blender until well blended.
To make a complete meal, use protein powder. Add protein at the very end (you don’t want to overblend protein powder). Top with a sprinkle of lime zest and enjoy!
