Some days we just feel like a salad. You feel us? Not a wimpy little iceberg lettuce salad though, a big salad. Yes, a big salad. [Thank you, Elaine, for making this a thing.]

We’re sure you see beautiful, delicious looking salads at restaurants or on blogs but how do you recreate those at home? With what you have in your fridge? We’ve got some easy steps that will help you build the best big salad.

Step One: Go green. Yep, this is the base. What greens do you have on hand or what sound good? Mixed greens, spinach, romaine, kale if you’re feeling crazy – get a good base on your plate [or in your giant bowl].


Step Two: Pile on some more veggies. Think a little outside the box on this one – what veggies do you like? These can be cold/raw or roasted. We love brussels sprouts, beets, carrots, cabbage – the sky is the limit here!

Step Three: Protein. Yep, this is an important step. Protein helps with the ‘satisfaction’ of a meal – it fills you up! Again, what do you like? Throw it on! Tuna, salmon, grilled chicken, ground beef, eggs – the list could go on forever. We love having warm protein on a cold salad – somehow it’s more satisfying!

Step Four: Fatten that baby up. Fat is another key part of this salad. We love adding nuts or seeds for a little texture variation and you can’t go wrong with some sliced avocado #amiright?

Step Five: This often feels like the most important step – it surely brings the salad together: dressing. Nobody loves a dry salad. There are so many simple vinaigrette recipes out there but this is a fan fav in the PN community:

  • 1 cup extra virgin olive oil
  • 1/4 cup water
  • BIG Tablespoon of dijon mustard
  • a couple garlic cloves [depending on how you like it!]
  • juice of a lemon
  • 1/2 Tablespoon of honey [optional]
  • salt and pepper to taste
  • any other fresh herbs you love or that need to be used up!


Step Six: Bonuses! Herbs, fruit, spices – go wild! Think of these as fun add-ons. Maybe you add in a little lemon, lime or orange zest. Maybe you add in some chopped cilantro or basil. Pomegranate seeds or strawberries? Don’t have to ask us twice.

Step Seven: Sit down, acknowledge your beautiful creation and enjoy!
